Where we once believed that the restaurant thought leaders were those in fine dining, more and more of today’s food trends and innovation are starting in the fast casual space.
New trends are a result of changing market behavior predominately influenced by the Millennial Mindset. We have seen recently that a majority of these new trends are directly related to food. By adding fresh food concepts and new flavor profiles, chains like Panera, Qdoba and Pie Five have not only caught millennials’ eyes, but also their stomachs.
